Two things make Miami Beach the hardest refrigeration environment in the county. In practice
No piece of equipment in a Beach hotel gets neglected as reliably as the ice machine, and none produces more complaints when it falls behind. Demand peaks in the same weeks the ambient temperature and the humidity peak, so a machine already struggling with a fouled condenser and a scaled evaporator will halve its output exactly when the bar needs everything it can make.
Scale is the usual culprit and it builds steadily rather than suddenly. A machine on a descaling schedule keeps its rated output for years. A machine only touched when someone reports a problem will spend most of its life underperforming, and the eventual repair costs far more than the servicing would have.
Access is the other Beach-specific complication. Getting a replacement unit into a back-of-house corridor on Collins or Ocean means arranging loading, working around delivery restrictions and often moving equipment through a service route designed for laundry carts. We measure the route before ordering, because a unit that will not fit through the door is an expensive way to lose a night.
